Recipe: Easy Sausage rolls (with veg)

I make these sausage rolls all the time, they are easy to make - reading this recipe is actually harder than making them!  They are also egg free & dairy free, I originally started making them for a friend who has a son with allergies, discovered that I totally loved eating them & then added them to my 'regular' make & eat menu.

Recipe: Slow Cooker Lasagne

This is the easier ever way to make a lasagne - nothing is cooked on the stove, nothing baked in the oven, it's all done in the slow cooker on your benchtop AND there is only the one thing to wash - just the slow cooker dish! Too easy!

Recipe: The easiest Spaghetii Squash & Meatballs

Yesterday, at 3pm I suddenly realised that I had not organised anything for dinner. Hey, it's 3pm I hear you say you have plenty of time but hey, not in my house... 3pm is the start of hell in my house! The baby was due to wake up & then would need to be changed, dressed, booby fed then the toddler would need afternoon tea as well then there is play time with them both then at 4pm it's the baby's dinner time which takes alllllll of my patience (& a mop!) then it's bathtime for them both then it's the toddler's dinner time then it's 'quiet play' with them both then it's booby time for the baby then it's bedtime then it's adult dinner time...  Phew, I'm exhausted thinking about it (& I've got to do it all again this afternoon too!)

Recipe: Honeycomb

This honeycomb makes for an excellent gift, wrapped up in a pretty jar or as a surprise afternoon treat for those people that have been extra good!

This is a very quick thing to make, it is made within 10 minutes then you set it aside to set - super quick, super easy!

Honeycomb sounds like it would be a daunting/complicated thing to make, but trust me, it isn't.
I have a few tips for you though just to make things easier....
~ do NOT use a small saucepan, use a bigger one that would at least hold 5 cups of water in it easily (trust me on this bit!)
~ accurately measure the bicarb (otherwise that is all you will taste!).
~ mix the bicarb in with a knife

~ get the tray ready to put the honeycomb BEFORE you start to make it, as this stuff sets pretty quickly!

Honeycomb
100g caster sugar
120 g golden syrup (or 4Tb but I prefer to weigh the syrup as it is so much easier)
1.5 tsp bicarb soda

~ Line a tray with baking paper.
~ In a saucepan, melt the sugar & syrup together. Swirl the pan (don't stir it) to dissolve the sugar.
~ All the mix to boil to 150 degrees (Celsius) and when it is a golden brown colour, take off the heat.
~ Add the bicarb soda to the mix, ensuring that it is stirred thoroughly - the mix will froth & bubble & increase in size.
~ Pour onto the tray & leave to set, it can be placed in the fridge to quicken the setting time.
~ Break up and either gift wrap or eat!!  It can also be covered in chocolate or crumbled over icecream....mmm, yum!
